Gim Brittle

Ingredients (Makes 10 servings)

14 oz/397 g sugar
6 fl oz/177 mL water
10 oz/284 g glucose syrup
11 oz/312 g raw peanuts
4 1/2 oz/128 g sesame seeds
1 tsp/5 g salt
2 oz/57 g butter, cubed
2 tsp/10 mL vanilla extract
1 3/4 tsp/9 g baking soda
6 sheets gim, chopped (Gim #4)


1. Line a half-sheet pan with a silpat and set aside.
2. Combine the sugar with the water in a medium saucepan. Bring to a boil over medium-high heat while stirring constantly. Add the glucose syrup and continue cooking without stirring until the mixture reaches 239°F/115°C. Add the peanuts and sesame seeds and continue cooking, stirring constantly, until
the mixture reaches 311°F/155°C.
3. Remove from the heat and stir in the salt, butter, and vanilla extract. Add the baking soda and gim, and stir well to incorporate.
4. Pour the mixture onto the prepared sheet pan and quickly spread into an even layer with an offset spatula.
5. If desired, when the brittle cools to a plastic consistency, pull and stretch the sheet by hand into make a more delicate candy. When cooled completely, break the brittle into 2 in/5 cm squares. Store in an airtight container.
