Saengseon-ganjang-jorim (Glazed Fish in Soy Sauce)

This dish is braised fish and radishes in a sweet soy sauce.

Ingredients (Makes 4 servings)

1 Spanish mackerel (mackerel or salmon) (1 lb, 500g, trimmed)
2 stalks green onion (2 oz, 60g, white part only)
4 cloves garlic (⅔ oz, 20g)
½ oz (15g) ginger
vegetable oil as needed

Seasoning for braising
3 tablespoons soy sauce,
2 tablespoons sugar,
2 tablespoons rice wine,
2 tablespoons corn syrup,
1 tablespoon sesame oil,
pinch of ground black pepper,
¼ cup water

Preparation
  1. If the fish has not been prepared and cleaned by fish monger, snip the
    fins off with scissors. Then slice the belly to remove intestines, and wash
    the cavity. Pat dry the fish with paper towels and cut it into 2-inch (5-cm)
    long pieces.
  2. Cut the white part of green onion into 2-inch (5-cm) long.
  3. Slice the ginger and garlic.
  4. In a small bowl, combine all the ingredients of seasoning and mix well.
Recipe
  1. Heat the vegetable oil in a large skillet over the medium-high heat.
    Place the fish pieces in it and broil them half, and then set aside in a
    plate.
  2. Put the seasoning, green onion, garlic, and ginger in a skillet, and then
    bring to a boil. When the sauce boils, put the fish pieces in. Reduce the
    sauce until it thickens into a dark glaze, by pouring the sauce onto the
    fish.
  3. Transfer the fish to a serving plate and pour the sauce over the top.
